Deditos de Que….
One of my past favorite Colombian treats were Deditos de Queso. It really just translates to cheese sticks or fingers. Cheese in dough. There are plenty premade dough or even pre made deditios de queso you just place in the oven. But, I wanted to try it on my own. I made it with gluten-free dough. And because it is trial and error, I learned quickly I could do with changing the cheese to maybe a cheddar, which isn’t the typical cheese to use for this popular Spanish appetizer. My curiosity, eh. The cheese choice is to your preference. Additionally, make sure to keep the butter COLD. Because, I chose to use plant butter, it softens fairly quickly even though it still works.
Note: Colombian Deditos de Queso are normally fried. This time I baked them. BUUUT, next time, I will try shallow fry.
You will need:
Dairy Free Cheese ( I tried Daiya Mozarella 6 pack cheese sticks)
2 cups “gf Jules” Gluten Free Flour
1 teaspoon sea salt
4 teaspoons coconut sugar
1 teaspoon grain free baking powder
5 tablespoons plant butter
6 tablespoons ice water
Directions:
Mix dry ingredients in a large bowl. Flour, sugar, baking powder and salt.
Add the butter and water until a dough forms. I currently do not own a mixer, therefore I use a spoon then my hands. If dough is still dry, add ice water 1 tablespoon at a time. I added 3 more tablespoons & 1 tablespoon of plant butter.
Form a ball. Then cover with plastic wrap and place in the refrigerator for about 40 minutes.
On a lightly floured surface, roll out the dough.
Cut dough into strips.
Wrap the cheese stick using one strip of dough overlapping the dough. Fold and seal the edges.
Continue process until all dough is used.
Cover and freeze until frozen. 15 to 1 hour, depending on how cold your freezer is.
Preheat oven to 375 F
Lightly spray baking sheet or foil.
Line deditos on baking sheet.
Bake for about 30 minutes.
Let cool.
